この講座は、江戸前寿司がどのようにして作られているのか、その仕込み術や握りの手法を体験をしながら学んでいきます。普段はあまり見ることのない本格江戸前寿司の舞台裏を知ることで、寿司を一層楽しくいただくことができるようになります。
Wa-ism (or Japanism) Experience Service is a culture class where you can actually experience how a traditional Japanese meal is cooked, thereby learning the history, know-how, spirit, and other aspects hidden behind the particular meal. You can discover lots of things that you've never got to see simply by eating! Don't hesitate to come, relax, and enjoy it!
In this course, you can learn through a hands-on experience how Edomae-zushi (the traditional kind of sushi from the Edo era, in the early 1800s) is made, how preparations are made, and how to grip and shape pieces of sushi. By learning what is going on behind the scenes of full-fledged Edomae-zushi, which you rarely get to see, you can learn to savor sushi with even more fun than before.

(2) How to prepare sushi toppings (such as how to fillet a fish and work efficiently in making Edomae-zushi)
(3) Hands-on experience in gripping and shaping sushi

(5) Sampling, a questions-and-answers session with a sushi chef, etc.

- Kurosawa Sushi (sushi developed by the sushi chef Shuichi Kurosawa) prepares not only traditional kinds of sushi but vegetable sushi based on fresh agricultural produce as well. Under their motto "Agriculture by farmers and sushi by chefs with customer focus", they offer just-prepared sushi.
