焼く前にカットしますか？カットしてから焼きますか？

Crispy pork belly
Use a fork to poke holes into the pork belly meat which comes with its skin
Apply the Chinese roast chicken seasoning mix onto the meat except the skin
Grill it in the oven on high heat for 1 hour
Question!
Although it is said that we should cut it into 3 equal parts, do we do this before or after grilling?
I had received the recipe for oxtail thymin previously so it's fine!
I am also fine since I got the same for hamburger patty!
