カマ、兜の塩焼
魚の頭やカマを塩焼きにしたものです。大根おろしとポン酢または醤油でいただきます。魚の種類によっては、照り焼きにする場合もございます。
カマ焼きの『カマ』は、魚の胸鰭のあたりの事です。
運動量の多い部位の為、身は締まっていながらよく脂がのっていて、とてもおいしい部分です。
『兜』とは、魚の頭を鎧兜の兜に見立て、そう呼ばれています。
ミーバイとは沖縄の方言でハタ類のことをいいます。サンゴ礁に囲まれた沖縄の海にはさまざまなミーバイが生息しています。
