Thanks for writing in. Those four machines are very similar, with very few differences. The only differences between the Rocket Cellini and Rocket Giotto is the shape of the machine. The Giotto will have flared sides whereas the Cellini will have straight sides.

Those machines are all able to produce great coffee, provided you have a good enough burr grinder to pair with your machine. As new models, they will come with single and double shot portafilter, some cleaning brushes, an aluminum tamper, a microfiber towel to clean off the stainless steel, and the Evoluzione models come with a braided metal hose.

The differences between the the Premium Plus and Evoluzione versions, are that the Premium Plus models will only have a water tank whereas the Evoluzione models will have both a water tank and the ability to be hooked up to your plumbing. The Evoluzione machines will also have a rotary pump as opposed to a vibratory pump because its able to be plumbed in. Another small difference between the two is that the Premium Plus models will have gauges that are white, whereas the Evoluzione models will have black gauges.
