Sado has been performed in many manners to enjoy tea since old times. As Sen no Rikyu established wabi-cha, various schools of the tea ceremony, including the ones preceding him, have carried on the Way of Tea up to the present day. There are still some heads of the sado schools remaining in Kyoto, who often make tea offerings at events of the temples and shrines as well as on the occasion of the Gion Festival. The culture of sado has its historically deep roots in Kyoto.
Confections are also an integral part of sado to bring out a better flavor of tea.

Sen no Rikyu established the rules of behavior of the Wabi cha since then the various schools including that of established before Sen no Rikyu have been carried over the traditions generation to generation. Even at present, many tea masters has been based in Kyoto which makes the city borrowing heavily from the cultural taste of tea ceremony as those tea masters often hold the tea offering to the gods during an event at a shrine and temple, and the Gion Festival. In tea ceremony, a Japanese cake served with the tea is an inevitable to complement the taste of tea.

Beautiful pastries with a sense of the seasons, are being patronize during the tea ceremony. Pastry with cheese and butter, and oil are not suitable for tea ceremonies.
Maccha is a kind of green tea used in the tea ceremonies. First , use a scoop of maccha in the tea cup. Then poured the hot water into the tea cup using the ladle. And while slightly lowering the tea cup, stir quickly using the tea whisk and the tea is done. There may be impressions that the tea in the tea ceremony is bitter, but there is no such a thing. Maccha just taste fine after your mouth has been sweetened by candies.

Then, ladle hot water into the cup at once, and stir quickly with a bamboo tea whisk while holding it softly with your hands. That's how you make a Matcha tea. You might have an image that tea of tea ceremony is bitter, but it is not true. Matcha freshen your mouth by rinsing it after you enjoyed sweets.
