It's a season for delicious bamboo shoots. They are on the market all year round vacuum packed and canned, but fresh bamboo shoots are only available this season. Those just dug out can also be eaten raw. I have a fun memory of when I went to dig up the bamboo shoot before. I was offered to eat the raw bamboo shoots but ended up getting them deep fried. This was a really rare experience.
Bamboo shoots take time and hard work to prepare. They have to be boiled in rice bran and left to cool for about an hour. After that, cooking can begin.
