我々が使っている玉鋼は日本刀と同じ原材料で炭素含有量が約１～1.5％です。
また、包丁の構造としては刃の所を玉鋼を使い、それを挟むようにステンレスを使用しています
ですので、貴方のお求めになる素材を満たしていると考えられます
もしどうしても全長２１ｃｍにしたい場合は別途注文となります

Structure of the knife is that the edge is made by Tamahagane which is sandwiched by stainless.
