我々が使っている玉鋼は日本刀と同じ原材料で炭素含有量が約１～1.5％です。
また、包丁の構造としては刃の所を玉鋼を使い、それを挟むようにステンレスを使用しています
ですので、貴方のお求めになる素材を満たしていると考えられます
もしどうしても全長２１ｃｍにしたい場合は別途注文となります

This one is the closest one you ordered.
Though this kitchen knife is not 21 cm, we have one 20 cm long and made of stainless steal.
The Tamagane we are working with and is made from the same raw material as Japanese sword, contains around 1 to 1.5% carbon.
We use Tamagane for knife edge and stainless steals are arranged so as to sandwich the edge.
Therefore, I am sure it satisfies the conditions.
If you want it 21cm long no matter what, you need to order a custom-made kitchen knife.
