ピンク色に着色された餅米（粘り気の強いお米）から作られた餅を覆っているのは、塩漬けされた桜の葉っぱです。

そんな桜餅の風味を忠実に再現するため、マカロンには本物の塩漬けされた桜の葉が練り込まれているそう。そのため、ほんのりしょっぱいそうですよ。
