Sweet shrimps are a little smaller than normal shrimps. They are named after their unique sweetness.
I'm not good at taking off their shells, however, sweet shrimps are easier to take off their shells because they are softer. This is why I recommend them.
Shrimps are one of the most popular kinds of sashimi, with sweet shrimps listed top.
When I order assorted sashimi and find shrimps with heads and tails in it, it will give me an impression that it is a luxurious sashimi!

A northern shrimp, called Amaebi in Japanese, looks smaller than one commonly called Ebi. Amaebi tastes a bit sweet and that is the idea of its name.
Even though I am not good at peeling, Amaebi is easy to peel since the shell is not stiff. That is a part I like it.
Starting from such an Amaebi, Ebi is one of very popular things in a Sashimi dish.
When we order Sashimi dish, we love to see Ebi itself, with shell altogether on the plate. It looks somehow gorgeous on table!

Shrimps are not very expensive, but have been a kind of luxurious food for Japanese.
Shrimps, whose oral texture can be enjoyed in spite of their size, are one of the most popular menus of Japanese-style bar. This is because they can be eaten less expensively than spiny lobsters.
Many people argue about whether they eat heads and tails of shrimps or not. Basically I don't eat them, but I understand that deep dried shrimps can be eaten entirely (with heads and tails). Their crunchy texture might match well with alcohol.

For us Japanese shrimps are not a most fancy food, but are still a little cush. Though small in size, sweet shrimp tastes very good, and you can enjoy a shrimp taste at a cheaper price compared with other expensive ones like crawfish. So it is one of the popular foods at Japanese-style bars. Sometimes we argue about whether to eat their head and tail or not. I myself do not eat them basically, but fried head and tail, especially, may be tasty when you crunch them; they might marry with alcohols.
