甘エビは普通の海老と比べて少しこぶりな海老で、その独特の甘みからその名前がついています。
私は海老の殻むきが苦手なのですが、甘エビは比較的殻が柔らかく身から離しやすいので、おすすめです。
そんな甘エビを筆頭に、海老は刺身の中でも人気のある種類のひとつです。
刺身の盛り合わせを頼んで、その中に海老があり、海老の頭やしっぽが付いていると、それだけでなんとなく豪華なお刺身になります!

A northern shrimp, called Amaebi in Japanese, looks smaller than one commonly called Ebi. Amaebi tastes a bit sweet and that is the idea of its name.
Even though I am not good at peeling, Amaebi is easy to peel since the shell is not stiff. That is a part I like it.
Starting from such an Amaebi, Ebi is one of very popular things in a Sashimi dish.
When we order Sashimi dish, we love to see Ebi itself, with shell altogether on the plate. It looks somehow gorgeous on table!
