Good day sir, can you give me the lengths of each of your cooking knifes and also at what angle / degree are each sharpened. Are they sharpened both sides at 21 degrees approx and or are they like a sushi kindle sharpen one side. Always good to know and looking forwards to buying a quality hand forged chef knife, 8" , Chopping and a paring Knife
