それを昔ながらの方法でカンナでまっすぐ仕上げていく。

効率を考えるとめちゃめちゃ悪いかもしれない。

機械で削ったところで、手で削ったこととそんな変わるわけでもない。

ただ時間がかかっているだけなのかもしれない。

だけど、そこに私は魅力を感じる。

その日本の表具業界がドンドン小さくなっている。

表具に使う和紙を作る職人が減っている。

表具に使うキレを作る職人が減っている。

職人がどんどん減っている。

賛否両論あるかもわからないが、職人気質こそが本来の日本の素晴らしさの一因なのではないでしょうか？

I finish it straight with a plane by using a traditional method.

When I think about its efficiency, it is not very good idea.

It is not so different the finished product whichever you use - your own hands & traditional tools or a machinery plane.

Therefore, it may be only to waste of time to do it traditional way.

についてですが、原文と異なっていると思います。また文法的に、
whether you use you own hands and traditional tools or a machinery plane, it does't make much difference in the finished product
と書いた方がなめらかかと。

直訳した場合、私なら以下のように書きます。
It doesn't make much difference furnishing either by hand or machine.
