１. 京都に都が置かれていた明治維新以前からの生産されていた歴史を有する野菜の品目。 ２. 京都市域のみならず、京都府内全域で生産されている野菜の品目。 ３. 筍を含む。 ４. キノコ類、シダ類（ぜんまい、わらび等）を除く。 ５. 種の保存の為にのみ栽培されている野菜の品目。又は、栽培されていないものの種が保存されてい る野菜の品目。及び絶滅した野菜の品目を含む。

Definition of traditional Kyoto vegetables
1. Traditional vegetables which have been produced before the Meiji Restoration in1868 when the capital was located in Kyoto.
2. The vegetables are produced in not only Kyoto central city but also Kyoto prefecture.
3. It Includes Bamboo shoots.
4. It Excludes mushrooms, ferns (flowering royal fern, bracken, etc.)
5. It includes the vegetables which are grown only for the species preservation or the vegetables species which are not grown but it is preserved the species. And it includes the extinct vegetables.
