電気味覚とは舌面に電気刺激を受けた時に感じられる味覚だ．今日では電気味覚計による味覚検査に活用されている．味質は多少個人差があり，基本的に苦味などが感じられる．
電気味覚の飲食分野への活用
これまでの電気味覚提示では直接電極を舌に当てていた．本研究では，電気味覚を調味料や添加物のように使えるようにした．
電気味覚の調味料としての特性
電気味覚を加えると塩味が強調される．ピリピリしたような刺激も感じる．甘いものとは相性がよくない．刺激の強さは飲食物の仕組みを変えるほどではない．

Electric taste is the sense you feel when your tongue is electrically stimulated. The test for taste sense is done by electrogustometry. How it is tasted differs depending on individuals and basically is bitter.
Utilization of Electric Taste in Food Production
The direct application of electrodes onto the tongue was previously used to display the electric taste. In this study the electric taste is used as seasonings or additives in food.
Characteristics of Electric Taste as Seasonings
Adding the electric taste makes the foold saltier. It also gives tingling sensation to the tongue. It interacts badly with sweet food. The degree of stimulation is not as strong as it changes the basic taste of the food or the drink.
