使用前に板を湿らすとよし
水をつけてふきんでまな板を拭く板前さんの一連の動作は、食材の水分をまな板に染みこませない先人の知恵。

同様の動作をすれば匂いや汚れが付着しずらくなります。食材に余計な水分を付けないために、濡らしたまな板の水分はふきんで拭き取りましょう
使用後は洗って水分を拭き取るとよし
使用後はなるべくすぐに水ですすぎ水分を拭き取れば汚れが付着しずらくなります。匂い移りが気になる魚や肉は洗剤で洗い流した後、熱湯を掛ければ消毒になります。食洗機は急激な温度変化と乾燥による反りや割れの原因となりますのでお避け下さい
まな板は自然乾燥がよい
洗ったまな板は木目を縦にして自然乾燥させましょう。

キズ対策
刃のキズは粗塩をまぶしタワシで水洗いするか、クレンザーで擦ると抗菌効果あり。重曹をまな板にすり込んで水洗いするのもよし。
反りや黒ズミ予防
まな板は木目が縦になるように立てかけて保管すると反りにくいです。また片面しか使用しなくても両面を水で洗って両面を濡らしてから乾かします。
反りの直し方
薄いまな板は全体に水をかけ日陰で立てて置けば大概は戻ります。大きく反った時は凹面に塗れたふきんを掛けて凸面を日光にあてて修正をかけてみ

粗塩や重曹をすり込んで洗うと落ちやすくなります。黒ズミを落としたらサンドペーパーやヤスリで平らにならすことをオススメします。

抗菌剤を使った樹脂などのまな板と同様、青森ヒバの天然の抗菌作用も万能ではございません。使用環境によって劣化速度に差が生じることをご了承くださいませ。

P.S.
Like plastic chopping blocks which use antibacterial agents, natural antibacterial action of the Aomori cypress is not versatile. Please be aware in advance that rate of deterioration differs depending on usage environment.
