What really differentiate us is the atmosphere that people can feel in our Bistrot.

We try to differentiate our recipes from what is around us 「弊レストランの近海で漁獲される魚の種類に基づき料理に差を生み出している。」これは曲解です。「周辺の他店のレシピとの差別化を図っている」という意味にとるのが自然です。/even though we keep an eye on the excellence that we have in our territoryという文。territoryは地域。the excellenceはここでは「優れた店」あるいは「優れたレシピ」。全体で「この地域の他店の優れたレシピには常に目を見張らせていますが」
