その変色はステンレス綱の表面の酸化皮膜が空焚きや過熱により、熱変色したものです。化学変化を起こしたわけではなく単に変色しているだけですので、使用上も健康上も問題はありません。
気になる場合は市販のステンレスクリーナーやクリームクレンザー等を乾いた柔らかい布に取り磨いてください。
その後よくすすいでください。また、磨く際は含まれる研磨剤の粒子によって表面に擦り傷が残る場合がありますので、目立たぬところで試してから行ってください

The color change is caused by overheat or heating when it is empty. Such heat affects the color of the oxidize film on the surface of stainless steel. Since the change happened not because of a chemical change, but just discoloration, it is safe to use without any affect on your health.
If you are concerned about it, you may use any stainless steel cleaner or cream cleanser with soft cloth to polish, then rinse well. Also when you polish, the abrasive particles in cleanser might scratch the surface, so please test it on a hidden spot first.
