Oedoとは1600-1800年代の首都である東京を表し、その当時では世界一になったといわれる江戸の人口や繁栄を表す名称。メインシェフはkuraなどで腕を振るったオークランドでも最も経歴の長いと思われる日本人シェフ、Fujiyaさん。常に地元人の好みや和食の動向を見てきたプロフェッショナルだ。
落ち着ついた暗めの木調インテリアは古き日本家屋をイメージされ、異空間に来たようだ。器も江戸をイメージする独自に用意しているという。
Oedo represents the capital Tokyo in the period from 1600 to1800. The name express the world largest population at the time as well as its prosperity. The main chef is Japanese chef Mr.Fujita, who gave full scope to his talent at Kura and seems to have longest history in Oakland.
He is the professional chef who has always seen the taste of local people and the trend of Japanese food. The interior designs witht dark wood carvings evoke old Japanese-style house, where you may feel as if you are in a different dimension. It is said that their original dishes which evoke Edo, are prepared.
