前回送ったメールについてですが、間違いがありました。
すみません。
初年度の仕入れ価格の予定は$42000です。
日本での販売動向を見ながら、仕入れ数量を決めていきたいと思います。
次年度は倍の仕入れを目標にしています。

この文章では分かりにくいところではありますが、全体的に"I"よりは"we"の方が適切な印象を受けます。
1文目は、that節内は通常の語順から変える必要はあまりないのではないかと思います。また、"our last email"とすることで、「前回送ったメール」をよりシンプルに表現できます。
「仕入れ数量」は"purchase quantity"などの方がよく使われる表現かなという印象です。「販売動向」は"sales trend"がベターでしょう。「動向を見る」という時には、ビジネス文脈では"monitor"を使う方が良いかと思います。
最後の文は、"we"で始めると"we"で始まる文章が2つ続いてやや不格好なので、"our goal"を主語にして書いてみました。動詞の"double"を使う場合は、"in a year"（1年後に）によって「次年度に2倍にする」の意味を表現すれば良いでしょうか。
